Avocado is one of my favorite fruits. I love it in my salad, in my omelette, in my salad dressing, with cheese and crackers, or simply as guacamole.
Beside the awesome flavor, avocado is considered as one of the healthiest fruits.
According to U.S. Department of Agriculture, avocado is brain healthy food, lowers cholesterol, fights obesity that leads to diabetes and many other health complications, regulates and lowers blood pressure, and has anti-cancer properties among other healthy benefits.
“Avocados are high in fat. But it’s monounsaturated fat, which is a “good” fat that helps lower bad cholesterol as long as you eat them in moderation.” WebMD
Here I share with you a hearty avocado dressing that is easy to make and goes well with almost any green salad.
Heart-Healthy Avocado Dressing (serving 2)
Ingredients:
1/2 a medium avocado mashed
4 tablespoon freshly squeezed lemon or lime juice
1 tablespoon extra virgin olive oil
2 tablespoon filtered water
1 clove of garlic minced
1 tablespoon chopped cilantro
salt and pepper to taste
Preparation:
In a small bowl mash avocado with a fork. Add all other ingredients and mix until it’s smooth.
Enjoy with your favorite green salad.

Notes:
I like my dressings tangy, but you can always add a little honey or sugar to balance out the sourness of lemon juice. Keep in mind that adding sugar or honey increases the calories.
Storage:
Refrigerate the remaining dressing in a tightly closed jar or bottle. For one serving, I keep it in a “Dressing 2 Go” squeezable container, available at Bed Bath & Beyond. It will stay good for a couple of days.
